Black Spark Plug

Hello Peeps,
I've had a few issues with my 43F!
It's a bitch to start when it's hot. Checked the spark plug and its covered in black soot so it's running rich which could be the cause of the no hot start. I've checked out the choke plunger to see if its leaking but it seems to be in good nick. I'm quite confused about changing the fuel / air mixture. Do I need to remove the carb and unscrew the actual jet?
Also, got a serious knocking from the engine. It happens when I throttle off at high revs under load. I suspect it's the big end bearing but before I tear down the engine, I thought I'd try adjusting the valves and check that the timing was working OK. Does anybody have any other checks I can make before committing to busting open the engine?
