Is there a vacuum in the tank, perhaps vent is blocked or given your fix with ignition off and back on maybe a solenoid controls that? Loosen the filler cap when you have the problem and see if it makes a difference

Great looking countryside there, nicely written and a great example of how great plans can be derailed in the blink of an eye. Hopefully all heals well and you'll be back there again.
